Almond Chocolate Brittle Recipe

Sweet almonds, rich chocolate, and sea salt combine for a divine treat! Simply Irresistible.

Ingredients

1 ¾ cups granulated sugar
1 cup light corn syrup
½ cup water
½ teaspoon vanilla extract
2 cups almonds
¼ cup almond butter (or Maple Almond Butter, such as Justin's)
½ cup dark chocolate chips
1 teaspoon olive or vegetable oil
1 tablespoon coarse grain sea salt

Directions

Step 1

In a large pot, mix together sugar, corn syrup, and water. Bring it to a boil and let it continue boiling without stirring until it reaches 280° to 290°, which takes about 5 to 10 minutes.
 

Step 2

Once it reaches the desired temperature, remove it from heat. Immediately stir in the vanilla and chopped almonds, followed by the almond butter. Use two forks to spread the mixture onto a baking sheet lined with nonstick foil, a silicone baking mat, or well-greased heavy-duty foil. Let it cool until firm.
 

Step 3

While waiting for the mixture to cool, melt the chocolate and canola oil in the microwave, stirring every 30 seconds until fully melted.
 

Step 4

Carefully invert the brittle so the flat side faces up. Spread the melted chocolate on top and sprinkle with coarse or flaky sea salt.
 

Step 5

Allow it to set before chopping or breaking it into pieces. Store the brittle in the refrigerator.
