Apple Crumble with Oats

Easy, quick, and gluten-free treat!

Ingredients

For the Filling:
4 cups firm baking apples, peeled, cored, and chopped to 1/4" chunks (about 4 medium apples or 492 grams)
2 teaspoons ground cinnamon
3/4 teaspoon ground cardamom
1 tablespoon raw sugar or granulated sugar
For the Topping:
9 tablespoons (126 grams) refined coconut oil (or 9.5 tablespoons (133 grams) butter for non-vegan, non-dairy-free)
1/2 cup (100 grams) raw sugar or granulated sugar
1/4 cup (60 milliliters) maple syrup
1 1/2 tablespoons vanilla extract
1 1/4 cups (113 grams) rolled oats (use GF oats if needed)
3/4 cup + 1.5 tablespoons (78 grams) oat flour (use GF oat flour if needed, or for non-GF, use 3/4 cup + 2.5 tablespoons (113 grams) all-purpose flour or white whole wheat flour)
1/2 teaspoon baking powder
1/4 teaspoon salt

Directions

Step 1

Preheat Oven:
Preheat the oven to 350 °F (175 °C).
Grease a 9" pie pan.

Step 2

Prepare Filling:
In a large mixing bowl, combine peeled, cored, and chopped apples with ground cinnamon, ground cardamom, and raw or granulated sugar.
Spread the apple mixture evenly over the bottom of the prepared pie pan.

Step 3

Prepare Topping:
In another large mixing bowl, combine melted refined coconut oil (or melted butter for non-vegan), raw or granulated sugar, maple syrup, vanilla extract, rolled oats, oat flour (or all-purpose flour), baking powder, and salt.
Stir until just combined.

Step 4

Assemble and Bake:
Spread the topping mixture over the apples in the pie pan.
Bake for 40-45 minutes or until the apples are bubbly, and the topping is firm.

Step 5

Serve the apple crumble with a scoop of vanilla ice cream or vanilla sauce.
