Chocolate Truffle Cake

Ingredients

Ingredients:

1 and 1/2 cups all-purpose flour
1 and 1/2 teaspoons baking powder
1 and 1/2 teaspoons baking soda
3/4 cup unsweetened cocoa powder
1 and 1/2 cups granulated sugar
1/2 teaspoon salt
2 large eggs
1 cup whole milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
For the truffle ganache:
1 cup heavy cream
2 cups semisweet chocolate chips
2 tablespoons unsalted butter

Directions

Step 1

Preheat: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Step 2

Dry Ingredients: In a large bowl, sift together flour, baking powder, baking soda, cocoa powder, sugar, and salt.

Step 3

Wet Ingredients: Add eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until well combined.

Step 4

Boiling Water: Stir in the boiling water gradually. The batter will be thin, but that's normal.

Step 5

Bake: Pour the batter evenly into the prepared pans and bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.

Step 6

Truffle Ganache: While the cake is baking, prepare the truffle ganache. Heat the cream in a saucepan until it just begins to boil. Pour it over the chocolate chips and butter. Stir until smooth.

Step 7

Assemble: Allow the cakes to cool completely. Spread a layer of truffle ganache on top of one cake layer, place the second layer on top, and cover the entire cake with the remaining ganache.

Step 8

Chill: Refrigerate the cake for a few hours to allow the ganache to set.
