Maple Pecan Brie fondue

Like Canada, this is a dish of cross-cultural influences blending French, American & Canadian tastes.

Ingredients

Round puck of Brie cheese (about 300g-500g)
60g (1/4 cup) of pecans
60g (1/4 cup) of dried cranberries
125g (1/2 cup) of maple caramel (or just mix the caramel with 30g (2 tbsp.) of maple syrup)
15g (1 tbsp.) of rosemary
15g (1 tbsp.) of butter
100g of store-bought caramel 

Directions

Step 1

First, roast your pecans in a medium pan over stovetop (just below medium) until fragrant. Set aside.

Step 2

Start your oven at 350F (or 175C).

Step 3

While oven is starting, unwrap your Brie cheese and set in a container that is just a little bigger than the cheese itself.

Step 4

Using same stovetop pan as Step 1, melt 1 tbsp. of butter until melted, add the previously roasted pecans, add the dried cranberries, rosemary and all the maple caramel. Melt together all ingredients until forming a paste. Let it rest 5 minutes out of the stovetop.

Install the maple caramel pecan paste over the whole Brie cheese and put in the previously heated oven. Watch 10-15  minutes until you see some cheese melt out of the puck. take out of oven and serve immediately.

 

Serving suggestion

Traditionally served with toasted baguette rounds, we prefer with fresh pears as it balances out the sugar and cheese better.
